If you know me personally or if you've read my blog for any amount of time, you probably know that even though I do enjoy things being a certain way, I also like things rather simple.
If it's hot outside and I'm hungry, I don't relish heating up the kitchen for an elaborate meal. I just want a simple, healthful meal to get me through the heat. A simple solution for me is grilling a deliciously marinated lean meat and mixing up a salad with vinaigrette.
Here's a fabulous recipe for chicken. I suppose you could use it with any meat, but it's designed for poultry.
Put olive oil and lemon juice on a large platter. Season with salt, freshly ground pepper, minced garlic, and freshly chopped rosemary. Mix it all together.
I usually pound the chicken breasts to be thin, or more preferably, I cut them in half horizontally. The point is to get the same thickness of meat from one end to the other. Layer the chicken pieces on top of the marinade and turn them so both sides are coated.
Grill them till still juicy, but well cooked. Serve with a green salad or vegetable.
