I've been making this recipe for many years ... probably since I first met my mother-in-law. It was a much requested dessert that she made and after we moved away, I had to take the recipe with me.
It is usually made with Jello pudding and Cool Whip, but I decided to try it with all of the layers being made from scratch. After all, I wouldn't typically use most of the ingredients listed on the Jello box or Cool Whip container so why use the package mix that has them?
Ever since the wheat allergy showed up in our family, I've made it with a wheat-free crust, and even with a full gluten-free flour mix once. (You can find that recipe in the link above, too, or under the Recipes tab.) This time, I whipped cream from scratch (which is almost as easy as opening a tub of Cool Whip), and made the pudding from scratch (which ISN'T as easy as the box mix, but neither is it difficult). Blackberries were the stars because blueberries were sold out!
As far as taste, I absolutely loved the couple of bites that I snuck. It had a richness and authenticity that the box mixes just can't provide! I encourage you to try out some of your own recipes that call for prepackaged ingredients and discover a new, real taste. :)
