Apparently, today was National Popcorn Day.
I wish I knew who it was that makes up all the "National Day of XYZ". Seems every day brings something else to celebrate and I can't say that I'm opposed to that at all. Especially when it involves popcorn. ;)
I'm just back from my trip to visit my grandmother and my aunt made the best caramel corn while I was there ... and she does it in the microwave which ranks it right up there with a high score in Scrabble. Just about the best thing ever. You will have to experiment with your own microwave because some will cook faster than others. If you want to do it in the oven, you heat the oven to 250-degrees, bake the popcorn for an hour, stirring every 10-15 minutes.
The recipe calls for Chex cereal, popcorn, cashews or peanuts, but of course, you can leave the nuts out if you want. Whatever floats your boat.
