My doctor's appointment yesterday went well and my doctor encouraged me to eat plenty of warm foods. She is cute that way. She didn't have to twist my arm at all given the temperatures that we've been experiencing in the last week or so. Many warm, comforting foods are not easy on the caloric count, but I remembered this soup that I make in the winter when eating a cold salad is out of the question yet fresh vegetables are desired.
It is very simply a bowl full of vegetables, cooked slightly in some chicken stock (you could use vegetable stock for a vegan option), served up with all the brightness of summer, and full of nutritional value. It's perfect as a counterpart to all the party food we are offered this time of year, right? Feel free to eat it with brown rice, quinoa, or any other grain you love, too.
