Celery root is U.G.L.Y. ... almost other-wordly.
I first wrote about celery root close to a year ago when I told about having to eat celery root salad as a child. You can read that story HERE, if you want. A friend commented on eating it mashed or roasted and I said I would try it. I never did, though, until last night.
The recipes for mashed celery root or celery root puree are all about the same and very simple to make: peel and chop the celery root into cubes and cook it in milk and water with a medium potato and a small onion. Drain the milk and run the cooked vegetables through the food processor, food mill, or use a potato masher. Incorporate a little butter, salt, and pepper, top it with chives and there you have it ... a side dish fit for a king.
The puree was delicious and I must confess to liking it just as much as mashed potatoes and more than mashed cauliflower. That's the gospel truth. Try it and see for yourselves.
