I love long, productive days at home. Days where the time seems to slow just enough for me to accomplish something useful, but short enough for me to not feel overwhelmed.
Today was that kind of day for me. Laundry was on the list, as it often is so I got it going. I had accumulated the ingredients to make a Soffrito (a low + slow cooked onion/tomato relish of sorts) and I had twelve red, yellow, and orange peppers that I wanted to roast to use in another recipe later. I got the Soffrito cooking and the peppers roasting and addressed my Christmas card envelopes.
I ended up with two pints of Soffrito and two quarts of roasted red peppers.
Laundry is done as are the Christmas card envelopes. I call that a fabulous Friday.
PS ... I'm missing the French Fridays with Dorie today. I simply ran out of time to test one of the recipes and only realized it this morning. I chose to make Soffrito and roast peppers instead and I'm pretty sure Dorie would forgive me. ;)
