We've spent the better part of the last five days at a baseball tournament that also coincided with summer coming to the Northwest. We've been out in the sun, under the bright blue sky, enjoying America's favorite sport (as much as possible when we're losing! Ugh!), and finding ways to nourish ourselves away from the stove. When summer comes to the Northwest, it comes with a determination to make us appreciate it while it's here. And we do. We love fleece, but we love the sun more. I have the sunburn and bug bites to prove it. (For the record, the bugs only show up late in the evening and this is what I get for sitting outside too late!)
A summer salad that has all the elements of a full-on meal is certainly welcome in the heat of summer so I concocted something that fills that bill. I was inspired by a salad at one of my favorite Pizzerias, one that has won many awards ... Pagliacci's. It has beans, veggies, meat, great seasonings … and tastes fresh and cooling on a hot summer evening.
This photo only shows half of my plate because the salad was waiting on a perfectly grilled steak from the BBQ. I would suggest that a Greek-flavored grilled chicken breast would be wonderful as well … just season your chicken with a little olive oil, lemon juice, oregano, salt and pepper, then grill. So yummy!
