So today I'm posting a recipe for a Peanut Butter Pie. Seems contradictory, but it isn't … because I don't expect any of you would eat the entire pie at one sitting. Moderation will take you far.
This recipe showed up many years ago and it is a crowd pleaser, for sure.
I mean, really, folks, when you fill a chocolate cookie crumb crust with peanut butter and cream cheese, what's NOT TO LIKE?!
(I used Paul Newman's alphabet cookies and whirred them in the food processor. I helped some people, had fun with the letters, and got a great crust out of it, too!)
The filling is six simple ingredients. Combine the first five, then whip the sixth one (cream!) and fold it into the peanut butter mixture.
I didn't say this was low-calorie and I DID warn you about only having a small slice. It is a rich dessert!
I like to top it with a bit of the chocolate cookie crumbs … just to make it look that much more appetizing. And of course, it looks really good in my Polish pottery pie plate (that I bought at Tuesday Morning for a song and a dance!)
