This week has been quite the week. Seems I'm consistently taking two steps forward and three steps back and not accomplishing much! My car is not driveable at the moment and although I don't have any errands to run, I still feel housebound when I don't have wheels.
Today started out in much the same manner as most of my days this week, but quickly made a turn for the better when Emily and Rylie decided to come visit me.
Rylie says, "Just hold on one second there, Miss Tammy … let's have some lunch!" (She didn't actually say that, but she DID hold up her finger and say, "Can you take my picture?")
I had purchased the mushrooms to make Quinoa Risotto so that's what we decided to do for lunch with sautéed Brussels sprouts on the side. Mushrooms and I get along famously! And quinoa is a new friend, full of good nutrients. Apparently, Rylie doesn't have such good relationships with mushrooms, quinoa, OR Brussels sprouts so she had a great kid lunch: PB&J + apple slices!
Quinoa is a complete protein and also has all nine essential amino acids and very healthy fiber. Add in those mushrooms and you are eating very well. Flavor it with thyme, onion, garlic, and make a white wine reduction right in the pan with the mushrooms and you are talking high class lunch! Thanks, Bon Appetit, for that recipe.
NOTE: This makes a great meal as well as a side dish!
I was all caught up in the Design class, but now I'm behind again. I'm sure those two steps forward and three back didn't help. I had also intended to finish my December Album by January 31st, but that didn't get done either.
I'm setting out to get something accomplished and check off some things from my list this weekend!
