When someone with food allergies lives in your home, you start exploring new ways of eating and finding things that are safe for everyone. Our Em is allergic to wheat … yeah, that meant she couldn't eat pitas in Greece or Jerusalem bagels in Israel. Bummer. I experiment occasionally with gluten-free recipes, but she does so more than I do. And she is gracious enough to allow me to share them with you.
The first time we made it, she used the Nearly-Normal GF Flour Mix, but this time, she was in a rush between nanny jobs and since we were out of the Nearly-Normal mix, she used Bob's Red Mill Flour Mix. It was OK, certainly edible, but had a twinge of too much of something. We couldn't quite place it. So … the consensus is that we recommend keeping a bundle of the Nearly-Normal on hand!
