Cinnamon Sugar Cookies with Chocolate … doesn't that just make you drool?! Or is it more proper to say "salivate"? It's probably more proper to not say either! Oh well … these cookies have the potential to do either to you!
Cinnamon Sugar Cookies with Chocolate make me think of a sprinkling of cinnamon on the top of a frothy mocha (yes, I live in Seattle!), or maybe Mexican Hot Chocolate. I got this recipe from my dear friend, Lynne, who I first met when we lived in Utah. Neither of us live there anymore and we don't talk to each other very often either. But, when we DO talk … it's just like I spoke with her yesterday, it's like no time at all has passed, it's like old times. She is a sweetie and if she happens to find this here … I wish her a Merry Christmas. (She'll get a card anyway, but … just in case!)
She and her husband (he loved to cook!) would often come up with wonderful meals and sweets to share with us. We spent many lazy weekend evenings with them, eating fabulous food. At Christmas, she did as I do … she made cookies, lots of them, to share around. I used to host a Cookie Exchange each season and this recipe is one that she brought one year … SO good.
Cinnamon Sugar Cookies with Chocolate
- 1 c. unsalted butter, room temperature
- ¾ c. sugar
- 2 egg yolks
- 2 t. vanilla
- 2 ½ c. flour
- ½ t. baking powder
- 1/8 t. salt
- 1 t. cinnamon
- 4 oz semisweet chocolate (or as much as it takes to dunk these babies in!)
Beat butter and sugar until creamy. Add egg yolks one at a time. Add vanilla.
In another bowl, stir together flour, baking powder, salt, and cinnamon. Gradually add dry ingredients to the butter mixture.
Divide dough into three parts and form into 1 ½" diameter logs.
Refrigerate for at least 30 minutes.
Slice logs ¼-inch thick, and bake in a 350˚F oven for 10-12 minutes. Cool completely.
Melt chocolate in a double boiler (or in a bowl sitting in the top of a pot of simmering water) and dip one end of cookies into melted chocolate.
Place on waxed paper and refrigerate for at least 30 minutes.
… or set them in the garage on the hood of your car!
